What’s for dinner this week

Better late than never 🙂 I finally put together my menu suggestions for this week:

Menu ideas for the week of March, 31, 2014

Cream of asparagus soup

Monday
Stuffed artichokes
Mediterranean garbanzo salad

Tuesday
Tuna and vegetables macaroni and cheese
Spring vegetables salad

Wednesday
Chicken Kiev
Quinoa pasta with garlic and herbs

Thursday
Stuffed peppers
Brown rice with vegetables

Friday
Lamb chops, mint chimichurri sauce
Sautéed cauliflower


Artichokes stuffed with panko breadcrumbs, sautéed vegetables, and Parmesan.

Mediterranean garbanzo salad. Please don’t use the pitiful feta crumbles that you see on salads in restaurants in the US! In Greece, they top salads with a healthy brick of feta, the size of a deck of cards, plus good olive oil and fresh ground pepper. I like it this way!
