What’s for dinner next week

I apologize for being late with my menu ideas this week. It’s the tax time, and I was too busy with the paperwork. I filed about three pounds of cash receipts from 2013 last night! Now it is done, and I can think about the menu again, so here goes:

Mediterranean garbanzo salad. Please don’t use the pitiful feta crumbles that you see on salads in restaurants in the US! In Greece, they top salads with a healthy brick of feta, the size of a deck of cards, plus good olive oil and fresh ground pepper. I like it this way!

I remove the net from the whole boneless leg of lamb, open it up, season with salt and pepper, add a few garlic cloves and rosemary sprigs, fold and tie it back in shape. Make a few cuts with a pairing knife, insert garlic and rosemary. Roast at 400 degrees to the internal temperature 135. Rest 20-25 minutes.

What’s for dinner next week

In my weekly menu suggestions, I try to stick to the “meatless Monday” tradition: this lightens both the menu and the grocery budget, and it also gives at least one useful suggestion to a vegetarian reader. This coming Monday, however, is St. Patrick’s day. So I offer you the baked brisket for St. Patrick’s – an older tradition than meatless Mondays – and make Thursday meatless instead.
